Blue raspberry is growing in popularity on U.S. restaurant menus, becoming a staple in candies, beverages, and desserts.
Unlike other fruit flavors, it is not found in nature. Originally developed in the 1970s to distinguish raspberry-flavored products from other red-colored flavors, blue raspberry is trending in 2025 due to its nostalgic appeal and vibrant color, which attract consumers.
According to market research firm Datassential, blue raspberry is now ubiquitous, being used by quick service and chain restaurant operators. Dunkin’ and Sonic are two examples that have long been putting the flavor in drinks.
Blue raspberry is known by 84% of the U.S. consumer population, and 60% have tried it, with most being millennials; its appearance on U.S. menus has grown 52% over the past four years.
