FPI Southwest Style Cod fillets
V-8 Pomegranate Blueberry V-Fusion
Chipotle peppers in adobo sauce
Long grain & wild rice blend

Coconut Jasmine Rice
Spicy Greek Slaw
Greek honey
Sliced almonds
Pomegranate Cranberry/Raisins
Package coleslaw



Method

Bring V-8 Pomegranate Blueberry V-Fusion to a boil in a sauce pan. Whisk in Adobe sauce. Simmer until liquid is reduced by appox. half. Prepare Long Grain & Wild Rice Blend, FPI Southwest Style Cod and Spicy Greek Slaw as directed below. Plate Cod on a bed of rice with a side of slaw. Drizzle sauce reduction over the top of the cod.

Spicy Greek Slaw

Whip American Roland Adobe sauce into Greek honey. Toss with pre-shredded coleslaw.
