12 Icelandic® Brand Tater Crust Hoki Portions
12 thick slices foccacia, country white, whole grain or crusty Italian bread, toasted
1 cup pesto mayonnaise (see recipe below)
6 oz Iceburg lettuce, washed, dried, and shredded
24 slices fresh tomato
24 slices cucumber

Pesto Mayonnaise
3/4 cup prepared mayonnaise
1/4 cup prepared pesto

1. Combine mayonnaise and pesto mixing well. Cover and refrigerate until ready to serve.
2. Prepare Icelandic® Brand Tater Crust Hoki Portions as directed on packaging.
3. For each sandwich, lay toasted bread slice on work surface. Spread with a healthy tablespoon of pesto mayonnaise. Then layer shredded lettuce, tomato and cucumber slices. Top with an Icelandic® Brand Tater Crust Hoki Portion.
4. Serve sandwich warm with your favorite potato wedges.
