Icelandic® Cod Loins or Tails, thawed Eggs, beaten Milk Fresh bread crumbs Parmesan & Romano Cheeses Pine nuts, chopped Basil, chopped Parsley, chopped Salt and pepper, to taste Angel Hair Pasta, prepared to box instructions Lemon & basil, to garnish
Preheat oven at 350°. Prepare Angel Hair Pasta as instructed on box.
Beat eggs together in small bowl. Add milk and combine well. In large bowl, mix together bread crumbs, Parmesan and Romano cheeses, pine nuts, basil, parsley, salt and pepper.
Dip each Cod Loin or Tail in egg mixture and then in the bread crumb/Parmesan mixture. Place on a sheet pan and bake 10 to 15 minutes if thawed. If preparing Cod from frozen, bake 20 to 25 minutes.
Serve on seasoned Angel Hair Pasta topped with tomato sauce. Garnish with lemon and basil.
