IngredientsDirections
1 medium onion, sliced length wise in half, then sliced lengthwise into julienne strips (about 1-1/2 cups).
1 teaspoon vegetable oil.
8 ounces coarsely, shredded cooked pork carnitas.
3 tablespoons butter, softened.
1/2 teaspoon chipotle powder.
1/2 teaspoon ground cumin.
1 (14 to 16 inch) pizza crust, partially cooked.
2 DOLE® Frozen Mango Halves, partially thawed, cut lengthwise into slices.
1-1/2 cups (6 oz.) shredded manchego or queso blanco cheese.
1. Cook onion in oil in large non-stick skillet until onion is just tender, stirring occasionally. Add carnitas; cook just to heat through.
2. Combine butter, chipotle powder and cumin in small bowl. Brush butter mixture over crust.
3. Top with carnitas mixture and mango slices; sprinkle with cheese.
4. Bake at 450ºF. for 12 to 15 minutes or until crust is golden brown.
NOTE: If using unbaked pizza dough, bake for 15 to 20 minutes.
