The sunchoke is a nutty-flavored root vegetable that is often pureed into soups, but has enough versatility to find other places on menus as well. Sunchoke is most frequently seen at fine-dining restaurants. Although it’s only found on 1 percent of U.S. menus, it has experienced 68-percent growth over the past four years.
