A spritz is a wine-based lightly effervescent cocktail commonly served as an aperitif (before a meal) in its native Italy. It typically consists of prosecco, digestive bitters and soda water.
In the United States, spritzes are growing on menus as consumers lean toward drinks that are simple and unique, but also refreshing. Spritzes are also lower in alcohol than many other options — something that a growing number of consumers are looking for, supported by restaurant operators who would like to sell more drinks, which is easier to do if you won’t get drunk from the first one.
The classic Aperol Spritz — with prosecco, amaro and club soda — has been a popular option on U.S. drink menus since the 2010s, but bartenders in recent years have incorporated trending flavors, like lavender, in this easily customizable drink.
Market research firm Datassential reports that 53% of the U.S. population knows about spritzes but only 24% have tried them. Awareness highest among self-described “foodies” and Millennials.
