The Little Beet, founded in 2014 and owned by New York-based Aurify Brands LLC, has opened its first unit outside its New York-Washington, D.C. base with a new restaurant in Miami’s Aventura Mall.

The company’s 10th unit and its first location in Florida features the brand’s plant-inspired menu in the mall’s recently refreshed Treats Food Hall.

Becky Mulligan, the Starbucks Corp. veteran who was named CEO of The Little Beet in November, offers some background on the brand’s expansion and talks about the challenges and opportunities of the new location.

The Little Beet said it plans to open 15 more restaurants by the end of 2020.
