WHY IT’S COOL: Eschelon is a perfect example of what a multi-concept restaurant company can do for a smaller restaurant city. Its beautifully appointed restaurants offer an elevated big-city experience with a down-home feel. Variety is key, and Eschelon delivers in a big way with several varying concepts. Its two Japanese restaurants are loaded with culinary talent that have created menus that would succeed anywhere. Kudos to Patel, who has a keen eye and a smart palate.
