Poké Junké, which opened Feb. 4 in New York City, puts a new twist on the poké concept with a broad portfolio of global ingredients for its poké bowls as well as a variety of vegan- and gluten-free items. The concept, led by Spanish chef Juan Suarez de Lezo and inspired by his global travels, also plans new menu additions like nigiri croquettes, potato-based sushi rolls and fish tacos.
