A few months back, the AAA four-diamond-rated Seminole Hard Rock Hotel & Casino in Hollywood, FL, unveiled the highly anticipated Kuro, a unique Japanese craft kitchen. Overlooking the hotel’s pool, 240-seat Kuro features an opening dining room, a chef’s table (omakase bar) and a sushi bar with a view into the hot kitchen (sauté, tempura, robata grill).

Alex Becker, who serves as the resort’s creative culinary director, applies Japanese techniques to contemporary, artisanal ingredients for the main menu. Becker worked for the Nobu empire for nearly a decade before joining SBE’s Katsuya as corporate executive chef, opening restaurants in Dubai, Kuwait, Los Angeles and South Beach. Shuji Hiyakawa, who presides over the sushi offerings, is a protégé of Iron Chef Masaharu Morimoto. Together, they’re creating a sophisticated, polished menu deserving of the properties elite status.
