An inside look at Irvington Bar & Restaurant

Gerber Group, which is behind many restaurants located at Starwood Hotels and Resorts, recently opened Irvington Bar & Restaurant in the W New York at Union Square. It takes over the space formerly operated as Todd English’s Olives. The name Irvington is derived from the iconic New York literary figure, Washington Irving. A large painting hanging above the kitchen features a tongue-in-cheek depiction of Washington Irving’s Headless Horseman.

Irvington sits at street level adjacent to Union Square’s farmers’ market. It’s a perfect location for chef David Nichols, who favors carefully prepared market ingredients and straightforward presentations. His offerings include thoughtfully curated small plates, artisan flatbreads, house-made pastas and a variety of freshly roasted rotisserie items, including poultry, lamb and vegetables. As with most Gerber restaurants, Irvington will also feature an innovative bar program, including in-house bottled cocktails. Here’s a look inside.
