5½ cups hot water
8 oz. butter
1 25.5-oz. bag Uncle Ben’s® Savory Herb Stuffing with Whole Grains
1½ cups Santa Fe Seasoning Blend, dry
1½ cups brown sugar
¼ cup chipotle pepper, ground, dry
¼ cup salt
24 pork chops, 12-oz., thick-cut, bone-in
as needed, oil
Combine water, butter and seasoning packet in full-size hotel pan. Stir well until butter is melted. Stir in bread crumb mixture. Cover and bake in preheated 350°F conventional oven for about 25 minutes.
In mixing bowl, combine seasoning, brown sugar, chipotle and salt. Rub each side of pork chops evenly with 1 Tbsp. seasoning. Cut across on side of pork chops, making a 3”-deep horizontal opening. Stuff each chop with ½ cup (#8 scoop) prepared stuffing mixture. Heat oil in sauté pan over medium-high heat. Sear pork chops in batches for 2-3 minutes on both sides. Transfer to roasting pans.
Roast in a preheated 350°F conventional oven for 10-15 minutes, or until internal temperature reaches 155°F.
