INGREDIENTS:1/3 cup sugar
3 Tbsps. minute tapioca
1 2/3 cup whole milk
1 egg, well beaten *
6 Tbsps. (3 pouches)
Multimix powder
1 tsp. vanilla
*or ¼ cup egg substitute
DIRECTIONS:1. Mix together sugar, tapioca, milk and egg in a saucepan; let stand for 5 minutes.
2. Cook on medium heat, stirring constantly, until mixture comes to a boil. Remove from heat (pudding thickens as it cools).
3. Cool 5 minutes, then blend in the Multimix powder and vanilla, stir well until all the powder is dissolved. Cool 15 more minutes.
4. Stir pudding again and spoon into serving dishes. Serve warm or chilled. Store leftover pudding in the refrigerator.
