Pork Chops with Apple-Cranberry Sauce

Yield: 24 servings.

APPLE-CRANBERRY SAUCE:
3 Tbsp. canola oil
6 lb. golden apples, cut in medium dice
1 lb., 2 oz. yellow onions, cut in medium dice
2 lb., 4 oz. red bell pepper, cut in medium dice
3 Tbsp. grated ginger
3 cups Kikkoman Less Sodium Soy Sauce
3 cups apple cider vinegar
3 cups brown sugar
3 cups dried cranberries
1/3 cup lemon zest, minced
1 1/2 tsp. nutmeg
1 Tbsp. cinnamon

24 center-cut pork chops, 8 oz. each
1/2 cup Kikkoman Less Sodium Soy Sauce
as needed, nutmeg
as needed, white pepper

For apple-cranberry sauce: In rondo, heat oil over medium heat. Add apples, onions, peppers and ginger, and sautè for 5 minutes or until ingredients start to soften. Add remaining ingredients and bring to a boil; reduce heat and simmer until liquid is reduced to a syrup. Keep warm until service, or chill and heat to order. Yields 12 cups.

For each serving, to order: Sprinkle 1 pork chop with 1 tsp. soy sauce. Season with nutmeg and pepper. Grill chop on medium-high heat, 8 minutes per side. Plate. Heat 1/2 cup apple-cranberry sauce and spoon over chop.
