INGREDIENTS:3 pints cucumber, chopped and seeded
1 Tbsp. salt
3 cups chicken broth
1 ½ cups half-and-half or light cream
1 Tbsp. lemon juice
3/4 tsp. Tabasco® brand Pepper Sauce
18 ice cubes
for garnish, cucumber slices DIRECTIONS:Sprinkle chopped cucumber with salt; let stand 15 minutes. In container of electric blender, combine half the cucumbers, broth, cream, lemon juice and Tabasco®. Cover; process until smooth. Reserve.
Repeat. Process with remaining ingredients except ice cubes. To prepare an individual serving, blend 1 cup of cucumber mixture in container of electric blender with 3 ice cubes; process until smooth.
