Baked Brie with Strawberry-Blueberry Sauce
Yield: 8 (¾-cup) servings.
1 cup Dole® Fresh Frozen Sliced Strawberries, thawed, with juice
1 cup Dole Fresh Frozen Blueberries, thawed, with juice
8 oz. Brie cheese round, cut into 8 wedges
1 egg
1 Tbsp. water
⅓ to ½ cup brown sugar
17.3 oz. puff pastry sheets, thawed
as needed, Dole Fresh Frozen Mango Chunks, thawed
as desired for garnish, mango chunks and mint leaves
Place berries in blender or food processor container; cover and blend until smooth. Heat in small saucepan over medium heat 4-5 minutes. Cool slightly. Push through a sieve. Reserve berry sauce.
Stir egg and water together in small bowl. Unfold 1 pastry sheet on lightly floured surface, cut into 4 5" squares. Prepare each pastry by sprinkling small amount of brown sugar in center of pastry square. Cut one Brie wedge in half and stack on top. Add mango chunk. Brush edges of pastry square with egg mixture. Fold corners of pastry square to center over cheese and fruit, sealing well at four sides. Lightly brush top with additional egg mixture.
Repeat with remaining squares and second pastry sheet. Place pastries on large baking sheet sprayed with nonstick vegetable cooking spray. Bake at 400°F for 12-15 minutes, or until golden. Spoon a small amount of berry sauce on each dessert plate to serve. Garnish with additional mango chunks and mint leaves, if desired.
