WHY IT’S COOL: Simply put, Damon Wise is a top gun chef. In Manhattan he cooked with Andrew Carmellini, Tom Colicchio, Laurent Tourondel and Christian Delouvrier. But the bounty of Charleston’s low country lured him away, and with Buckley, a former advertising executive, they built an instant multi-concept company in a former train depot. There you’ll find upscale Scarecrow, a more casual cousin, Feathertop, and a smoked-meat mecca, Wise-Buck Smoked Meats. A prep kitchen feeds the three restaurants. The opening of a great restaurant is a joyous occasion. When three great restaurants open from a great chef, it’s like Christmas.
